Creamy Cilantro Lime Salad

Instructions

  1. Prepare the quinoa. Cook 1 cup of quinoa according to package instructions. Once cooked, I drizzle mine with olive oil and season with salt. Set aside to cool.
  2. Prepare the sweet potatoes. Preheat oven to 400 degrees. Add diced sweet potatoes to a sheet pan. Drizzle with olive oil and season with salt, pepper, and cumin. Toss to combine and place in the oven to bake for 20-25 minutes, tossing halfway through. Once cooked, remove from the oven to cool.
  3. Prepare the dressing. In a blender, add 1/2 cup yogurt, 1/2 avocado, cilantro, jalapeño, 2 garlic cloves, lime juice, 1 tsp honey, and salt. Blend until smooth and creamy.
  4. Prepare the salad. Add arugula to a large bowl and top with cooked quinoa, roasted sweet potatoes, corn, diced bell pepper, diced red onion, diced avocado, and cotija cheese.
  5. Drizzle the salad with the cilantro dressing. Toss to combine.
  6. Serve immediately and enjoy!
