Sweet Pecan and Goat Cheese Salad

  1. Prepare the dressing. Combine 1/3 cup olive oil, 3 tbsp white wine vinegar, 2 tsp dijon mustard, 1 tbsp honey, juice of 1/2 a lemon, grated garlic, 1/2 tsp parsley, 1/2 tsp rosemary, 1/4 tsp thyme, salt, and pepper. Whisk well.
  2. Add chopped kale to a large bowl and drizzle with dressing to the amount of your liking. Use your hands to massage the dressing into the kale.
  3. Top with diced red onion, goat cheese, pecans, diced grilled chicken, and avocado. Toss to combine.
  4. Serve immediately and enjoy!
