Green Chile Sausage & Egg Burritos

  1. In a pan over medium-high heat, prepare the ground sausage. cook until brown and no longer pink, breaking into small pieces with a spatula. Once cooked, remove the meat from the pan and set aside.
  2. In the same pan, add the can of green chiles and sauté for about one minute.
  3. Drizzle olive oil in the pan and add the whisked eggs. mix well with the chiles and cook until scrambled.
  4. Turn the heat off and add the sausage back to the pan. mix to combine.
  5. Assemble your burritos. Lay a tortilla flat and add the sausage and egg scramble. top with a few pieces of cooked hash browns, and sprinkle with shredded cheese. Roll into a burrito and set aside. repeat until you run out of ingredients.
  6. If planning to prep and freeze, roll each burrito individually in a sheet of aluminum foil and wrap well. Place in the freezer until ready to enjoy.
  7. When preparing from frozen - remove the frozen burrito from the foil and wrap in a damp paper towel. Heat in the microwave for 1.5-2 minutes.
  8. Serve warm & enjoy!
