One Pan Lemon Chicken Dinner

  1. Preheat oven to 400 degrees.
  2. In a small bowl combine 1/4 cup olive oil, 2 tsp honey, 1 tbsp dijon mustard, lemon juice, garlic, shallot, 1/2 tsp dried parsley, 1/2 tsp dried rosemary, 1/4 tsp thyme, salt, and pepper. Once mixed, set aside.
  3. In a large baking dish, add diced potatoes, broccoli, and diced bell pepper. Cover with the olive oil mixture and mix to combine.
  4. Add the chicken thighs and drizzle them with olive oil. Season with salt and pepper.
  5. Place the baking dish in the oven to bake for one hour.
  6. Once the chicken is cooked and the potatoes are soft, remove the baking dish from the oven. Serve warm and enjoy! Note: I serve mine with basmati rice (optional).
