Instructions

  1. prepare the quinoa according to the package. once it is cooked, add olive oil and season with rolfe rub.
  2. prepare the toppings. dice the green onion, cucumber, bell pepper, and avocado.
  3. prepare the salad dressing by combining olive oil, balsamic vinegar, rolfe rub, honey, lemon, dijon, oregano, rosemary, salt, and pepper in a small bowl. stir to combine.
  4. prepare the egg. I fried mine in a small pan over medium-high heat. cooked for about 2 minutes so it would be a bit runny.
  5. assemble your bowl. add kale as your base and drizzle the honey balsamic over the top. (TIP: massage the dressing into the kale before assembling the rest of your bowl)
  6. add the diced toppings and fried egg
  7. garnish with sunflower seeds and enjoy!
