Instructions
- prepare the quinoa according to the package. once it is cooked, add olive oil and season with rolfe rub.
- prepare the toppings. dice the green onion, cucumber, bell pepper, and avocado.
- prepare the salad dressing by combining olive oil, balsamic vinegar, rolfe rub, honey, lemon, dijon, oregano, rosemary, salt, and pepper in a small bowl. stir to combine.
- prepare the egg. I fried mine in a small pan over medium-high heat. cooked for about 2 minutes so it would be a bit runny.
- assemble your bowl. add kale as your base and drizzle the honey balsamic over the top. (TIP: massage the dressing into the kale before assembling the rest of your bowl)
- add the diced toppings and fried egg
- garnish with sunflower seeds and enjoy!
