- toast the bagel
- cook bacon in microwave
- while the bagel and bacon cook, whisk the two eggs in a bowl until frothy
- get a pan really hot. once it is pretty heated, turn the heat all the way off and immediately pour on the ghee and then the eggs.
- begin scraping the eggs to the center and then sprinkle a handful of cheese. season with salt.
- once the eggs are cooked through, soft, and fluffy immediately place it on the bagel and then add the bacon.
- enjoy!
