Green Chile Sausage & Egg Burritos

- In a pan over medium-high heat, prepare the ground sausage. cook until brown and no longer pink, breaking into small pieces with a spatula. Once cooked, remove the meat from the pan and set aside.
- In the same pan, add the can of green chiles and sautΓ© for about one minute.
- Drizzle olive oil in the pan and add the whisked eggs. mix well with the chiles and cook until scrambled.
- Turn the heat off and add the sausage back to the pan. mix to combine.
- Assemble your burritos. Lay a tortilla flat and add the sausage and egg scramble. top with a few pieces of cooked hash browns, and sprinkle with shredded cheese. Roll into a burrito and set aside. repeat until you run out of ingredients.
- If planning to prep and freeze, roll each burrito individually in a sheet of aluminum foil and wrap well. Place in the freezer until ready to enjoy.
- When preparing from frozen - remove the frozen burrito from the foil and wrap in a damp paper towel. Heat in the microwave for 1.5-2 minutes.
- Serve warm & enjoy!
