Caprese Chicken & Rice Bake Dinner

  1. Preheat oven to 400 degrees.
  2. Season the chicken thighs with salt and pepper.
  3. Drizzle olive oil in a cast iron skillet over medium-high heat. Add the seasoned chicken thighs to the skillet and sear on each side for 2-3 minutes. Set the chicken aside once charred and partially cooked.
  4. Add the onion and garlic to the skillet. Drizzle more olive oil if needed and sauté for 1-2 minutes.
  5. Add the rice and tomatoes. Season with salt and pepper. sauté for another minute.
  6. Pour the broth into the skillet then nuzzle the chicken into the broth and rice.
  7. Place the skillet in the oven to bake for 20 minutes.
  8. After 20 minutes remove the skillet from the oven and give the rice a good stir.
  9. Top with a handful of mozzarella pearls and place the skillet back into the oven to bake for an additional 5-10 minutes.
  10. Once the chicken is cooked and the cheese is melted, remove the skillet from the oven.
  11. Drizzle with balsamic glaze and top with fresh basil.
