Caprese Chicken & Rice Bake Dinner

- Preheat oven to 400 degrees.
- Season the chicken thighs with salt and pepper.
- Drizzle olive oil in a cast iron skillet over medium-high heat. Add the seasoned chicken thighs to the skillet and sear on each side for 2-3 minutes. Set the chicken aside once charred and partially cooked.
- Add the onion and garlic to the skillet. Drizzle more olive oil if needed and sauté for 1-2 minutes.
- Add the rice and tomatoes. Season with salt and pepper. sauté for another minute.
- Pour the broth into the skillet then nuzzle the chicken into the broth and rice.
- Place the skillet in the oven to bake for 20 minutes.
- After 20 minutes remove the skillet from the oven and give the rice a good stir.
- Top with a handful of mozzarella pearls and place the skillet back into the oven to bake for an additional 5-10 minutes.
- Once the chicken is cooked and the cheese is melted, remove the skillet from the oven.
- Drizzle with balsamic glaze and top with fresh basil.
