Harvest Chicken & Rice Bake Dinner

  1. Preheat the oven to 400 degrees.
  2. Season each side of the chicken with salt and pepper.
  3. Drizzle 2 tbsp olive oil in your pan or cast iron skillet and sear each side of the chicken for 2-3 minutes. Once charred and partially cooked, set the chicken aside.
  4. In the same pan, add diced sweet potatoes and red onion. Saute for 1-2 minutes and then add the brussels and seasonings. Stir to combine and saute for another minute or so.
  5. Add 1 cup of uncooked rice to the pan and saute for another minute.
  6. Pour in 2 cups of broth and stir to combine.
  7. Add the chicken back in the pan and place the pan in the oven to bake for 30 minutes.
  8. Once everything has cooked, remove the pan from the oven and top with goat cheese crumbles and pomegranate seeds.
  9. Serve warm and enjoy!
