Ingredients
Shrimp Skewers
- 1 lb. peeled and deveined shrimp
- 1 tbsp avocado oil or ghee oil
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1 tsp garlic powder
- 4 wooden skewers
Chimichurri Sauce
- 1 jalapeno, finely chopped (seeds removed)
- 3 garlic cloves, minced
- 1/3 cup red wine vinegar
- 1/4 cup olive oil
- 1/3 cup cilantro, finely chopped
- 1/3 cup flat leaf parsley, finely chopped
- 1 small shallot, finely chopped
- red pepper flakes, to taste
- salt, to taste
Instructions
- soak the skewers in water for at least 20 minutes.
- in a large bowl, season the peeled shrimp. start by covering the shrimp with 1 tbsp avocado oil and season with 1 tsp salt, 1/2 tsp pepper, 1/2 tsp dried thyme, 1 tsp dried oregano, 1/2 tsp paprika, and 1 tsp garlic powder.
- stick about 4-5 shrimp on each skewer.
- place the shrimp on the grill heated at 375 degrees. cook on each side for 2.5-3 minutes.
- prepare the chimichurri sauce. in a small bowl, combine 1 jalapeño, 3 garlic cloves, 1/3 cup red wine vinegar, 1/4 cup olive oil, 1/3 cup cilantro, 1/3 cup parsley, 1 shallot, red pepper flakes, and salt.
- serve the chimichurri over the grilled shrimp skewers and enjoy!
