Chimichurri Shrimp Skewers

Ingredients

Shrimp Skewers
  • 1 lb. peeled and deveined shrimp
  • 1 tbsp avocado oil or ghee oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1 tsp garlic powder
  • 4 wooden skewers
Chimichurri Sauce
  • 1 jalapeno, finely chopped (seeds removed)
  • 3 garlic cloves, minced
  • 1/3 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/3 cup cilantro, finely chopped
  • 1/3 cup flat leaf parsley, finely chopped
  • 1 small shallot, finely chopped
  • red pepper flakes, to taste
  • salt, to taste

Instructions

  1. soak the skewers in water for at least 20 minutes.
  2. in a large bowl, season the peeled shrimp. start by covering the shrimp with 1 tbsp avocado oil and season with 1 tsp salt, 1/2 tsp pepper, 1/2 tsp dried thyme, 1 tsp dried oregano, 1/2 tsp paprika, and 1 tsp garlic powder.
  3. stick about 4-5 shrimp on each skewer.
  4. place the shrimp on the grill heated at 375 degrees. cook on each side for 2.5-3 minutes.
  5. prepare the chimichurri sauce. in a small bowl, combine 1 jalapeño, 3 garlic cloves, 1/3 cup red wine vinegar, 1/4 cup olive oil, 1/3 cup cilantro, 1/3 cup parsley, 1 shallot, red pepper flakes, and salt.
  6. serve the chimichurri over the grilled shrimp skewers and enjoy!
