Creamy Lemon Pasta

  1. Bring salted water to a boil and cook your pasta until al dente. Save 1/4 cup of pasta water before draining.
  2. While the pasta cooks, in a seperate large pan over medium heat, add butter and olive oil. once the butter has melted, add minced garlic and season with salt and pepper. saute for 1-2 minutes.
  3. Pour in the heavy cream, stir to combine, and bring to a light simmer.
  4. Grate in parmesan and stir it into the sauce. Taste and season with more salt and pepper to your liking.
  5. Stir in lemon zest and lemon juice. Let it simmer on low for about one minute.
  6. Pour in the reserve pasta water and stir it into the sauce.
  7. Add the cooked pasta to the sauce and toss to combine.
  8. Serve warm with grated parmesan, fresh cracked black pepper, and a squeeze of lemon juice.
