Ingredients
- 1 lb boneless chicken breast
- 1 Siete taco seasoning pack
- Siete cassava flour tortillas
- 2 bell peppers
- 1/2 red onion
- 2 tbsp olive oil
- mexican shredded cheese
Instructions
- prepare the chicken. in a pot over high heat bring water to a boil (enough to cover the chicken completely, roughly about 4 cups). once the water is boiling, add the chicken and cook for about 15 minutes or until it is cooked all the way through.
- while the chicken cooks, chop the bell peppers and onion. I cut mine into long thin strips.
- in a large pan over medium heat, add the olive oil and bell peppers and onion. saute for about 2-3 minutes on medium heat and then turn the heat to low.
- once the chicken is cooked, drain it from the water and set aside to chop into bite-size pieces.
- place the chicken in the pan with the onions and bell peppers. add the siete taco seasoning and the water that the package calls for. stir to combine.
- in a separate pan, heat the siete tortilla according to the package. add cheese and the meat mixture. fold the tortilla in half and cook until the cheese is melted and the tortilla is golden brown.
- serve warm and enjoy!
