Greek Spaghetti

Ingredients

  • 1 lb. ground turkey
  • 3 tbsp olive oil
  • 1/2 white onion, diced
  • 3 garlic cloves, minced
  • 3/4 cup tomato paste
  • 1 cup water
  • 2 tsp cinnamon
  • salt, to taste
  • pepper, to taste
  • fresh parsley, for garish
  • spaghetti of choice (I used Banza)

Instructions

  1. heat oil in a large skillet or dutch oven over medium-high heat, add the turkey and break apart with a wooden spoon or spatula. cook until the meat is no longer pink and cooked through.
  2. once cooked, turn the heat to medium-low and add about 1 tbsp olive oil, diced onion, and garlic. sauté for 3-5 minutes.
  3. add the tomato paste and water. season with salt, pepper, and cinnamon. stir to combine and turn the heat to low. bring to a simmer and cover to cook for 10 minutes.
  4. serve over spaghetti or spaghetti squash with fresh parsley.
