Green Chile Enchiladas

  1. Preheat the oven to 350 degrees.
  2. In a large bowl combine, shredded rotisserie chicken, 1 can cream of chicken soup, 1 cup sour cream 1 cup shredded Mexican cheese, 1 can green chiles, 1 tbsp cumin, salt, and pepper. Stir well to combine.
  3. Lay a tortilla flat, add about 2 spoonfuls of the chicken mixture and roll the tortilla closed. Lay the tortilla in a baking dish and repeat this until you run out of tortillas and the baking dish is full.
  4. Add any of the excess chicken mixture on top of the rolled tortillas and spread evenly.
  5. Pour the salsa verde evenly over the enchiladas and top with shredded cheese. Cover with aluminum foil and bake for 25 minutes.
  6. Remove from the oven and remove the foil. Place the uncovered dish back in the oven to bake for an additional 10 minutes.
  7. Once the cheese has fully melted, remove from the oven. Serve warm with fresh cilantro and enjoy!
