One Pan Lemon Chicken Dinner

- Preheat oven to 400 degrees.
- In a small bowl combine 1/4 cup olive oil, 2 tsp honey, 1 tbsp dijon mustard, lemon juice, garlic, shallot, 1/2 tsp dried parsley, 1/2 tsp dried rosemary, 1/4 tsp thyme, salt, and pepper. Once mixed, set aside.
- In a large baking dish, add diced potatoes, broccoli, and diced bell pepper. Cover with the olive oil mixture and mix to combine.
- Add the chicken thighs and drizzle them with olive oil. Season with salt and pepper.
- Place the baking dish in the oven to bake for one hour.
- Once the chicken is cooked and the potatoes are soft, remove the baking dish from the oven. Serve warm and enjoy! Note: I serve mine with basmati rice (optional).
