Red Pepper Beef Stir Fry

RED PEPPER BEEF STIR FRY

Ingredients
- 1 lb. flank steak or sirloin
- 3/4 cup coconut aminos
- 1/4 cup rice vinegar
- 1/2-1 cup jasmine rice
- 5 green onions, diced
- 1 tbsp cumin
- 1 tbsp sambal oelek or sriracha
- 3 tsp red pepper flakes (optional)
- 1 tsp garlic powder
- 1 red bell pepper, sliced
- 1/2 white onion, sliced
- salt, to taste
- 1/2 tsp pepper
Instructions
- cut the steak into thin pieces and place in a large bowl. cover the meat with 3/4 cup coconut aminos, 1/4 cup rice vinegar, 1 tbsp sambal oelek, red pepper flakes, 1 tbsp cumin, and 1 tsp garlic powder. mix and set aside to marinate for 30+ minutes.
- while the meat marinates, prepare your other ingredients. slice the bell pepper and onion into thin pieces and cook 1 cup of jasmine rice according to the package instructions.
- in a non-stick skillet or wok over medium-high heat, add the marinated steak, the juice from the marinade, bell peppers, and onion. cook for 5-6 minutes or until the onion and bell pepper have softened.
- once the meat has cooked, turn the heat to low and add the cooked white rice and season with salt and pepper. mix to combine and top with green onion.
- serve on lettuce wraps or in a bowl!
