RED PEPPER BEEF STIR FRY

Ingredients

  • 1 lb. flank steak or sirloin
  • 3/4 cup coconut aminos
  • 1/4 cup rice vinegar
  • 1/2-1 cup jasmine rice
  • 5 green onions, diced
  • 1 tbsp cumin
  • 1 tbsp sambal oelek or sriracha
  • 3 tsp red pepper flakes (optional)
  • 1 tsp garlic powder
  • 1 red bell pepper, sliced
  • 1/2 white onion, sliced
  • salt, to taste
  • 1/2 tsp pepper

Instructions

  1. cut the steak into thin pieces and place in a large bowl. cover the meat with 3/4 cup coconut aminos, 1/4 cup rice vinegar, 1 tbsp sambal oelek, red pepper flakes, 1 tbsp cumin, and 1 tsp garlic powder. mix and set aside to marinate for 30+ minutes.
  2. while the meat marinates, prepare your other ingredients. slice the bell pepper and onion into thin pieces and cook 1 cup of jasmine rice according to the package instructions.
  3. in a non-stick skillet or wok over medium-high heat, add the marinated steak, the juice from the marinade, bell peppers, and onion. cook for 5-6 minutes or until the onion and bell pepper have softened.
  4. once the meat has cooked, turn the heat to low and add the cooked white rice and season with salt and pepper. mix to combine and top with green onion.
  5. serve on lettuce wraps or in a bowl!
