Viral Jennifer Anniston Salad
It’s hard to believe back to school season is almost here! That comes with busy schedules and new routines. One of my favorite meals to have on hand during a crazy week is the Viral Jennifer Anniston Salad! It’s healthy, delicious, and super easy to make. Ingredients
- 1 cup quinoa, measured uncooked
- 2 cups water
- 1 cup cucumber, chopped
- 1/2 cup mint, chopped
- 1/2 cup parsley, chopped
- 1/2 cup pistachios, chopped
- 1/2 cup red onion, chopped
- 1 can chickpeas, drained and rinsed
- 1/2 cup feta cheese
- 1 lemon, juiced
- 1/4 cup olive oil
- salt, to taste
- pepper, to taste
Instructions
- Add quinoa, water, and a pinch of salt to an uncovered pot and bring to a boil. Once boiling, reduce heat to simmer and cover to cook for 13-15 minutes. Once cooked, drizzle with olive oil and fluff with a fork. Set aside to cool for 10 minutes.
- Prep the dressing. In a Rubbermaid TakeAlongs Twist & Seal container add 1/4 cup olive oil, lemon juice, salt, and pepper. Twist to seal and shake well to combine.
- Once the quinoa has cooled, add it to a large bowl and top with cucumber, chickpeas, red onion, mint, parsley, pistachios, and feta cheese.
- Pour the dressing over the ingredients and toss to combine.
- Store in Rubbermaid TakeAlongs Meal Prep Containers.
- Place in the fridge until ready to enjoy!
