- Preheat the oven to 400 degrees.
- Season each side of the chicken with salt and pepper.
- Drizzle 2 tbsp olive oil in your pan or cast iron skillet and sear each side of the chicken for 2-3 minutes. Once charred and partially cooked, set the chicken aside.
- In the same pan, add diced sweet potatoes and red onion. Saute for 1-2 minutes and then add the brussels and seasonings. Stir to combine and saute for another minute or so.
- Add 1 cup of uncooked rice to the pan and saute for another minute.
- Pour in 2 cups of broth and stir to combine.
- Add the chicken back in the pan and place the pan in the oven to bake for 30 minutes.
- Once everything has cooked, remove the pan from the oven and top with goat cheese crumbles and pomegranate seeds.
- Serve warm and enjoy!
