Ingredients
- 1 lb boneless skinless chicken cutlets or thighs
- 1 orange bell pepper, diced
- 1.5 cup corn
- 2 cup baby potatoes, diced
- olive oil
- 4-5 tbsp mild taco seasoning
- salt, to taste
- pepper, to taste
- cilantro, for garnish
- fresh lime juice, for serving
- sour cream, optional for serving
Instructions
- preheat oven to 400 degrees.
- place the chicken thighs, corn, potatoes, and bell peppers on the baking sheet.
- drizzle with olive oil and season with salt, pepper, and taco seasoning.
- place in the oven to bake for 30 minutes.
- serve warm with fresh cilantro, lime juice, and sour cream.
