Greek Lemon Chicken

  1. Prepare chicken. Pat chicken dry with a paper towel. Add thighs to a ziplock bag. Cover with olive oil, lemon juice, garlic, and Rendezvous Greek Seasoning. Close the ziplock bag and shake to coat and combine. Marinate for a minimum of 30 minutes (best marinated overnight).
  2. Preheat oven to 350 degrees.
  3. Add diced potatoes and marinated chicken to a large pan. Season with salt and cracked pepper.
  4. Place in the oven to bake for 1-1.5 hours or until the internal temperature of the chicken is 165 degrees and the tops are golden brown. The last 2-5 minutes, broil until brown and crispy.
  5. Remove from the oven and top with fresh lemon juice. Serve warm and enjoy!
