Green Chile Enchiladas

- Preheat the oven to 350 degrees.
- In a large bowl combine, shredded rotisserie chicken, 1 can cream of chicken soup, 1 cup sour cream 1 cup shredded Mexican cheese, 1 can green chiles, 1 tbsp cumin, salt, and pepper. Stir well to combine.
- Lay a tortilla flat, add about 2 spoonfuls of the chicken mixture and roll the tortilla closed. Lay the tortilla in a baking dish and repeat this until you run out of tortillas and the baking dish is full.
- Add any of the excess chicken mixture on top of the rolled tortillas and spread evenly.
- Pour the salsa verde evenly over the enchiladas and top with shredded cheese. Cover with aluminum foil and bake for 25 minutes.
- Remove from the oven and remove the foil. Place the uncovered dish back in the oven to bake for an additional 10 minutes.
- Once the cheese has fully melted, remove from the oven. Serve warm with fresh cilantro and enjoy!
