Avocado Corn Salad

Ingredients
- 2 avocados
- 2 cups cherry tomatoes, halved
- 15 oz black beans, drained and rinsed
- 2 ears of corn, prepared to your liking (I boiled mine for 10 minutes)
- 1/2 red onion, diced
- 4 tbsp fresh cilantro
- 1/3 cup olive oil
- 1 small lime
- 2 tbsp cumin
- 3 tsp garlic powder
- 1 tsp paprika
- 2 tsp salt
- 2 tsp pepper
Instructions
Dressing
- in a small bowl combine, olive oil, lime, salt, pepper, cumin, garlic powder, and paprika. whisk together and set aside.
Salad
- in a large bowl combine, black beans, cherry tomatoes, red onion, avocado, corn, and cilantro.
- pour the dressing into the large bowl and gently toss the salad.
- serve cold and enjoy!
