Creamy Cilantro Lime Salad

Instructions
- Prepare the quinoa. Cook 1 cup of quinoa according to package instructions. Once cooked, I drizzle mine with olive oil and season with salt. Set aside to cool.
- Prepare the sweet potatoes. Preheat oven to 400 degrees. Add diced sweet potatoes to a sheet pan. Drizzle with olive oil and season with salt, pepper, and cumin. Toss to combine and place in the oven to bake for 20-25 minutes, tossing halfway through. Once cooked, remove from the oven to cool.
- Prepare the dressing. In a blender, add 1/2 cup yogurt, 1/2 avocado, cilantro, jalapeño, 2 garlic cloves, lime juice, 1 tsp honey, and salt. Blend until smooth and creamy.
- Prepare the salad. Add arugula to a large bowl and top with cooked quinoa, roasted sweet potatoes, corn, diced bell pepper, diced red onion, diced avocado, and cotija cheese.
- Drizzle the salad with the cilantro dressing. Toss to combine.
- Serve immediately and enjoy!
