Ingredients
- 6 cups kale
- 1/3 cup chickpeas
- 4 oz Applegate salami
- 1/4 cup sun-dried tomatoes
- 1/2 cucumber
- 1/4 cup banana peppers
- 1/4 red onion
- 1 avocado
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 2 tsp dijon mustard
- 1 tsp oregano
- 1 tsp garlic powder
- salt, to taste
- pepper, to taste
- parmesan cheese
Instructions
- make the dressing. in a small bowl, combine 1/4 cup olive oil, 3 tbsp red wine vinegar, 2 tsp dijon mustard, 1 tsp oregano, 1 tsp garlic powder, and salt and pepper to taste.
- prepare the salad. finely chop all the ingredients, including the kale. once chopped, place all the toppings and kale in a large bowl. add the dressing and toss to combine.
- top with fresh parmesan cheese and enjoy!
