Italian Chopped Salad

Ingredients

  • 6 cups kale
  • 1/3 cup chickpeas
  • 4 oz Applegate salami
  • 1/4 cup sun-dried tomatoes
  • 1/2 cucumber
  • 1/4 cup banana peppers
  • 1/4 red onion
  • 1 avocado
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tsp dijon mustard
  • 1 tsp oregano
  • 1 tsp garlic powder
  • salt, to taste
  • pepper, to taste
  • parmesan cheese

Instructions

  1. make the dressing. in a small bowl, combine 1/4 cup olive oil, 3 tbsp red wine vinegar, 2 tsp dijon mustard, 1 tsp oregano, 1 tsp garlic powder, and salt and pepper to taste.
  2. prepare the salad. finely chop all the ingredients, including the kale. once chopped, place all the toppings and kale in a large bowl. add the dressing and toss to combine.
  3. top with fresh parmesan cheese and enjoy!
