Ingredients

  • 1 cup quinoa
  • 3 tbsp olive oil
  • 1 tbsp rolfe rub
  • 1/2 large cucumber, diced
  • 1 cup cherry tomatoes, diced
  • 1/2 lemon
  • 1/3 cup Kalamata olives, diced
  • 2 garlic cloves, minced
  • 1/3 cup green onion, diced
  • 2 tbsp white wine vinegar
  • goat cheese
  • avocado
  • baby spinach

Instructions

  1. cook the quinoa according to the package. while the quinoa cooks, prep the other ingredients.
  2. chop the cucumber, cherry tomatoes, olives, green onions, and avocado.
  3. when the quinoa is finished cooking add rolfe rub, lemon juice, garlic, white wine vinegar, and olive oil. stir to combine.
  4. in a large container combine the quinoa and the chopped ingredients.
  5. prepare the meal prep boxes: in each box include baby spinach topped with the quinoa salad, goat cheese, and avocado. 
  6. I used white wine vinegar and olive oil as my dressing for the baby spinach.
  7. enjoy!
