Meal Prep Quinoa Salad

Ingredients
- 1 cup quinoa
- 3 tbsp olive oil
- 1 tbsp rolfe rub
- 1/2 large cucumber, diced
- 1 cup cherry tomatoes, diced
- 1/2 lemon
- 1/3 cup Kalamata olives, diced
- 2 garlic cloves, minced
- 1/3 cup green onion, diced
- 2 tbsp white wine vinegar
- goat cheese
- avocado
- baby spinach
Instructions
- cook the quinoa according to the package. while the quinoa cooks, prep the other ingredients.
- chop the cucumber, cherry tomatoes, olives, green onions, and avocado.
- when the quinoa is finished cooking add rolfe rub, lemon juice, garlic, white wine vinegar, and olive oil. stir to combine.
- in a large container combine the quinoa and the chopped ingredients.
- prepare the meal prep boxes: in each box include baby spinach topped with the quinoa salad, goat cheese, and avocado.
- I used white wine vinegar and olive oil as my dressing for the baby spinach.
- enjoy!
