Mint & Avocado Kale Salad

Ingredients
- 16 oz bag of kale
- 2 cups rotisserie chicken
- 1 avocado
- 3 green onions, diced
- 3 tbsp fresh mint, minced
- parmesan cheese, to garnish (optional)
- 1 cup peanuts, chopped
- 3 tbsp sesame seeds, toasted
Peanut Dressing
- 2 garlic cloves
- 1 tbsp. sesame oil
- 1 tbsp. peanut butter
- 3 tbsp. rice vinegar
- 1 tbsp. coconut aminos
- 2 tsp. ginger, grated
- 1 tsp. salt
- 1 tsp. pepper
Instructions
Salad
- prepare the kale by chopping into fine pieces, then place in a large bowl with the peanut dressing drizzled on top.
- toss to combine. *TIP: massage the dressing into the kale with your hand*
- in a small pan over low heat, place the sesame seeds in the pan and toast until golden brown.
- while the sesame seeds toast, add the minced mint, chopped peanuts, diced green onion , chicken, and diced avocado to the salad.
- top the salad with sesame seeds and parmesan cheese.
- serve and enjoy!
Dressing
- in a blender or food processor, combine garlic, sesame oil, peanut butter, rice vinegar, coconut aminos, ginger, salt, and pepper.
- blend until smooth and runny.
