Caprese Chicken & Gnocchi Sheet Pan Dinner

  1. Preheat oven to 400 degrees.
  2. Add cherry tomatoes and uncooked gnocchi to a sheet pan. Drizzle with olive oil, season with 3 tsp Italian seasoning, 2 tsp garlic powder, salt, and pepper to taste. Toss well to coat.
  3. Prepare the breading. Add breadcrumbs to a bowl and add 1 tbsp italian seasoning, 2 tsp garlic powder, and salt and pepper to taste. Mix to combine.
  4. Prepare the chicken. Lay the chicken flat and beat with a meat mallet until even and thin. Season each side of the chicken with salt and pepper.
  5. Dredge the seasoned chicken in egg wash, coating on each side. Dip the coated chicken in breadcrumbs on each side. Once breaded, lay on the sheet pan.
  6. Drizzle or spray each piece of breaded chicken with olive oil on each side.
  7. Place the sheet pan in the oven to bake for 15 minutes.
  8. After 15 minutes, remove from the oven and flip the chicken and toss the gnocchi and tomatoes.
  9. Place the sheet pan back in the oven to bake for 10 minutes.
  10. After 10 minutes, remove the sheet pan from the oven and add sliced mozzarella.
  11. Place the pan back in the oven to bake for an additional five minutes. Broil for an additional 1-2 minutes at the end or until the cheese is bubbling and browning.
  12. Once cooked, remove from the oven and top with balsamic glaze and fresh basil.
  13. Serve immediately and enjoy!
