Caprese Chicken & Gnocchi Sheet Pan Dinner

- Preheat oven to 400 degrees.
- Add cherry tomatoes and uncooked gnocchi to a sheet pan. Drizzle with olive oil, season with 3 tsp Italian seasoning, 2 tsp garlic powder, salt, and pepper to taste. Toss well to coat.
- Prepare the breading. Add breadcrumbs to a bowl and add 1 tbsp italian seasoning, 2 tsp garlic powder, and salt and pepper to taste. Mix to combine.
- Prepare the chicken. Lay the chicken flat and beat with a meat mallet until even and thin. Season each side of the chicken with salt and pepper.
- Dredge the seasoned chicken in egg wash, coating on each side. Dip the coated chicken in breadcrumbs on each side. Once breaded, lay on the sheet pan.
- Drizzle or spray each piece of breaded chicken with olive oil on each side.
- Place the sheet pan in the oven to bake for 15 minutes.
- After 15 minutes, remove from the oven and flip the chicken and toss the gnocchi and tomatoes.
- Place the sheet pan back in the oven to bake for 10 minutes.
- After 10 minutes, remove the sheet pan from the oven and add sliced mozzarella.
- Place the pan back in the oven to bake for an additional five minutes. Broil for an additional 1-2 minutes at the end or until the cheese is bubbling and browning.
- Once cooked, remove from the oven and top with balsamic glaze and fresh basil.
- Serve immediately and enjoy!
