Trader Joe's Creamy Lemon Pasta

  1. Melt 1 tbsp butter in a small pan over medium heat, add panko bread crumbs. Stir occasionally and cook until toasted and fragrant.
  2. Prepare the Trader Joe’s chicken meatballs according to package instructions. I prefer the air fryer method.
  3. Bring a pot of salted water to a boil. Once boiling, add half the pack of trader joes trofie pasta. Cook for 8-9 minutes or until al dente. Before the pasta is finished cooking, save 1 cup of pasta water and set aside.
  4. Make the creamy lemon sauce. In a pot or large pan over medium heat, add 1 tbsp butter and melt. Pour in one cup of heavy cream. Add 1 tbsp lemon zest and the juice of one lemon. Pour in about 3/4 cup of reserved pasta water and season with salt and pepper. Stir to combine. Add fresh grated parmesan and stir to combine. Bring to a simmer.
  5. Once simmering, add the cooked pasta and stir to combine.
  6. Add fresh chopped spinach and stir until wilted and well combined.
  7. Add the cooked meatballs and garnish with fresh parmesan and toasted bread crumbs.
  8. Serve warm and enjoy!
