Air Fried Artichokes & Herb Aioli

Ingredients

  • 2 artichokes
  • 1 lemon
  • 2 tbsp olive oil
  • 3 tsp rolfe rub 
  • 3 tbsp primal kitchen mayo
  • 2 tsp fresh parsley, minced
  • 1 tsp onion powder
  • 2 tbsp lemon juice
  • 2 garlic cloves, minced
  • salt, to taste

Instructions

  1. cut the artichokes in half.
  2. towards the bottom of the artichoke, there is a "fuzzy" part. using a spoon, scrape as much out of that as possible.
  3. once the artichokes are cleaned up, drizzle with olive oil and rub it in.
  4. season them with rolfe rub and lastly garnish with the juice of half of a lemon.
  5. cut the tips of the leaves removing the sharp ends.
  6. place in the air fryer face down and cook at 350 degrees for 10-12 minutes. check on them occasionally (every air fryer cooks a little different!)
  7. remove the artichokes from the air fryer. garnish with fresh lemon juice and serve warm.
Herb Aioli
  1. combine mayo, lemon, parsley, garlic, onion powder, and salt. mix well and serve as a dipping sauce with the artichokes.
