Parmesan Truffle Fries

Ingredients
- 2 russet potatoes
- 2 tbsp truffle oil
- kosher salt, to taste
- 4 tbsp olive oil
- salt, to taste
- fresh shaved parmesan cheese
- fresh parsley, minced
Instructions
- cut the potatoes in thin fry-like shapes. place in a large bowl and cover them with water. let them soak for at least 30 minutes. this will make them crispy.
- once they are finished soaking, drain them and pat them dry. place them in a large bowl, drizzle olive oil, salt and pepper. toss to combine.
- place in the air fryer and cook on 400 degrees for 18 minutes. be sure to flip/toss them at the 9 minute mark.
- once they are finished cooking, place them in a large bowl and drizzle truffle oil and season with kosher salt. toss to combine.
- serve with fresh parmesan and parsley
- dig in!
