Spicy Chicken Nachos

Ingredients

  • 2 bags of Siete sea salt tortilla chips
  • 1 pack spicy Siete taco seasoning
  • 1 lb. boneless skinless chicken thighs
  • 1/3 cup black beans, drained and rinsed
  • 2 roma tomatoes, minced
  • 1 fresh jalapeño, minced
  • 1/2 white onion, minced
  • 1/2 lime
  • 1 tbsp olive oil
  • 1 bag Spanish RightRice
  • 1 avocado, diced
  • Mexican shredded cheese
  • salt, to taste
  • pickled jalapeños (optional)
  • sour cream (optional)
  • cilantro (optional)

Instructions

  1. prepare the RightRice according to the package.
  2. drizzle olive oil on the top and bottom of the chicken thighs.
  3. season the chicken with the Siete seasoning. once seasoned, heat a cast-iron skillet or frying pan over high heat. 
  4. drizzle a little olive oil on the pan and sear the chicken on each side for 3-4 minutes or until the internal temperature is 165 degrees. 
  5. once cooked, place on a cutting board and chop into bite-sized pieces.
  6. line a baking dish or sheet pan with chips. top with chicken, black beans, and RightRice. 
  7. drizzle cheese on top and place in the oven at 375 degrees for 5 minutes or until the cheese is melted.
Pico de Gallo
  1. I made my own pico de gallo by combining diced tomatoes, onion, and jalapeño.
  2. add lime juice, olive oil, and salt. 
  3. mix to combine.
