Spicy Chicken Nachos

Ingredients
- 2 bags of Siete sea salt tortilla chips
- 1 pack spicy Siete taco seasoning
- 1 lb. boneless skinless chicken thighs
- 1/3 cup black beans, drained and rinsed
- 2 roma tomatoes, minced
- 1 fresh jalapeño, minced
- 1/2 white onion, minced
- 1/2 lime
- 1 tbsp olive oil
- 1 bag Spanish RightRice
- 1 avocado, diced
- Mexican shredded cheese
- salt, to taste
- pickled jalapeños (optional)
- sour cream (optional)
- cilantro (optional)
Instructions
- prepare the RightRice according to the package.
- drizzle olive oil on the top and bottom of the chicken thighs.
- season the chicken with the Siete seasoning. once seasoned, heat a cast-iron skillet or frying pan over high heat.
- drizzle a little olive oil on the pan and sear the chicken on each side for 3-4 minutes or until the internal temperature is 165 degrees.
- once cooked, place on a cutting board and chop into bite-sized pieces.
- line a baking dish or sheet pan with chips. top with chicken, black beans, and RightRice.
- drizzle cheese on top and place in the oven at 375 degrees for 5 minutes or until the cheese is melted.
Pico de Gallo
- I made my own pico de gallo by combining diced tomatoes, onion, and jalapeño.
- add lime juice, olive oil, and salt.
- mix to combine.
