Mexican Sweet Potato Hash

Ingredients

  • 1.5 lb. boneless skinless chicken thighs
  • 2 sweet potatoes, diced
  • 2 ears of corn
  • 1 bell pepper, diced
  • 1 jalapeno, diced
  • 3 tbsp Siete taco seasoning
  • 3 tbsp olive oil
  • salt, to taste
  • pepper, to taste
  • avocado, for garnish
  • cilantro, for garnish
  • lime, for garnish

Instructions

Hash
  1. dice the sweet potato, jalapeño, and bell pepper. 
  2. place in a large bowl and add the corn. 
  3. drizzle with 1 tbsp olive oil and season with Siete taco seasoning. toss to combine.
Chicken
  1. drizzle 1 tbsp olive oil on the chicken and season with salt and pepper. 
  2. cook the chicken in a cast-iron skillet over medium-high heat.
  3. sear on each side until the internal temperature of the chicken is 165 degrees. once cooked, set aside.
  4. cook the sweet potato hash in the same skillet immediately after preparing the chicken. 
  5. sauté the hash and add more olive oil if needed. cook until the sweet potatoes are soft.
  6. serve with the chicken on top of the sweet potato hash and garnish with fresh lime juice, avocado, and cilantro.
