Mexican Sweet Potato Hash

Ingredients
- 1.5 lb. boneless skinless chicken thighs
- 2 sweet potatoes, diced
- 2 ears of corn
- 1 bell pepper, diced
- 1 jalapeno, diced
- 3 tbsp Siete taco seasoning
- 3 tbsp olive oil
- salt, to taste
- pepper, to taste
- avocado, for garnish
- cilantro, for garnish
- lime, for garnish
Instructions
Hash
- dice the sweet potato, jalapeño, and bell pepper.
- place in a large bowl and add the corn.
- drizzle with 1 tbsp olive oil and season with Siete taco seasoning. toss to combine.
Chicken
- drizzle 1 tbsp olive oil on the chicken and season with salt and pepper.
- cook the chicken in a cast-iron skillet over medium-high heat.
- sear on each side until the internal temperature of the chicken is 165 degrees. once cooked, set aside.
- cook the sweet potato hash in the same skillet immediately after preparing the chicken.
- sauté the hash and add more olive oil if needed. cook until the sweet potatoes are soft.
- serve with the chicken on top of the sweet potato hash and garnish with fresh lime juice, avocado, and cilantro.
