Ingredients
- 1 lb ahi tuna
- 2 tsp olive oil
- salt, to taste
- pepper, to taste
- 1 tbsp sesame seeds
- 1 cup brown rice
- 1 mango, diced
- 1 jalapeno, minced
- 3 green onions, diced
- 1/4 cup cucumber, diced
- 1/4 cup coconut aminos
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tsp sriracha
- 2 garlic cloves, minced
- 2 tsp grated ginger
- 1 avocado
Instructions
- prepare rice according to package and season with salt.
- dice the mango, cucumber, green onion, and jalapeño.
- once the rice is finished cooking, add the sauce, mango, cucumber, and jalapeño. stir to combine.
- prepare the tuna steak. drizzle olive oil on the fish and season with salt, pepper, and sesame seeds.
- in a cast-iron skillet over high heat, add 1 tbsp olive oil and sear the tuna on each side for about 1-2 minutes or until a crust is formed. you want it to be pink in the middle.
- slice the tuna into thin pieces and serve over the mango rice.
- top with green onion and sliced avocado.

Sauce
- prepare the sauce: in a small bowl, combine coconut aminos, sesame oil, sriracha, garlic cloves, ginger, and rice vinegar.
