Mango Rice Tuna Bowls

Ingredients

  • 1 lb ahi tuna
  • 2 tsp olive oil
  • salt, to taste
  • pepper, to taste
  • 1 tbsp sesame seeds
  • 1 cup brown rice
  • 1 mango, diced
  • 1 jalapeno, minced
  • 3 green onions, diced
  • 1/4 cup cucumber, diced
  • 1/4 cup coconut aminos
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp sriracha
  • 2 garlic cloves, minced
  • 2 tsp grated ginger
  • 1 avocado

Instructions

  1. prepare rice according to package and season with salt.
  2. dice the mango, cucumber, green onion, and jalapeño.
  3. once the rice is finished cooking, add the sauce, mango, cucumber, and jalapeño. stir to combine.
  4. prepare the tuna steak. drizzle olive oil on the fish and season with salt, pepper, and sesame seeds. 
  5. in a cast-iron skillet over high heat, add 1 tbsp olive oil and sear the tuna on each side for about 1-2 minutes or until a crust is formed. you want it to be pink in the middle.
  6. slice the tuna into thin pieces and serve over the mango rice. 
  7. top with green onion and sliced avocado.
  8. ENJOY!
Sauce
  1. prepare the sauce: in a small bowl, combine coconut aminos, sesame oil, sriracha, garlic cloves, ginger, and rice vinegar.
