Mexican Red Pepper Skirt Steak
Ingredients
- 1.5 lb skirt steak
- 12 oz jar roasted red peppers
- 1 jalapeno
- 1 shallot
- 3 garlic cloves, minced
- 1/2 lime
- 1 tbsp cilantro
- cumin
- salt, to taste
- pepper. to taste
- olive oil
Instructions
- prepare the pepper sauce.
- finely chop the roasted red bell pepper, shallot, garlic, and jalapeno. once chopped, place in a bowl and add the juice from 1/2 of a lime, 1 tbsp olive oil, 1 tbsp chopped cilantro, and season with salt, pepper, and 1/2 tbsp cumin. stir to combine, cover and place in the refrigerator to chill.
- prepare the steak. drizzle about 1 tbsp over the top and bottom of the steak. lightly season with salt, pepper, and cumin.
- in a cast-iron skillet over high heat, add 1 tbsp olive oil to the skillet and sear the skirt steak. cook on each side for 3-4 minutes or until the internal temperature of the meat is 125 degrees.
- serve warm with the cool pepper sauce on top.
