Mexican Red Pepper Skirt Steak

Ingredients

  • 1.5 lb skirt steak
  • 12 oz jar roasted red peppers
  • 1 jalapeno
  • 1 shallot
  • 3 garlic cloves, minced
  • 1/2 lime
  • 1 tbsp cilantro
  • cumin
  • salt, to taste
  • pepper. to taste
  • olive oil

Instructions

Sauce
  1. prepare the pepper sauce.
  2. finely chop the roasted red bell pepper, shallot, garlic, and jalapeno. once chopped, place in a bowl and add the juice from 1/2 of a lime, 1 tbsp olive oil, 1 tbsp chopped cilantro, and season with salt, pepper, and 1/2 tbsp cumin. stir to combine, cover and place in the refrigerator to chill.
Steak
  1. prepare the steak. drizzle about 1 tbsp over the top and bottom of the steak. lightly season with salt, pepper, and cumin.
  2. in a cast-iron skillet over high heat, add 1 tbsp olive oil to the skillet and sear the skirt steak. cook on each side for 3-4 minutes or until the internal temperature of the meat is 125 degrees.
  3. serve warm with the cool pepper sauce on top.
