Ingredients

  • 1 lb. boneless skinless chicken thighs
  • 1/3 cup frank's red hot buffalo sauce
  • 2 green onions, diced
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 jalapeño, diced
  • Bibb lettuce or romaine lettuce
  • 1 avocado
  • 2 tbsp parsley
  • blue cheese crumbles
  • Tessemae's avocado ranch dressing

Instructions

Chicken
  1. marinate the chicken thighs in the buffalo sauce for at least 30 minutes. before cooking, season with salt and pepper.
  2. in a cast-iron skillet over medium-high heat, sear the chicken on each side for 3-4 minutes. 
  3. cook until the internal temp is 165 degrees.
Salad
  1. assemble the salad. the key is to chop all the ingredients well including the lettuce. 
  2. in a large bowl, combine the chicken, diced bell pepper, jalapeño, green onion, avocado, parsley, and cucumber.
  3. top with ranch dressing, blue cheese crumbles, and buffalo sauce!
