Chicken Teriyaki Bowls

Ingredients

  • 5 lb boneless skinless chicken breast tenders
  • 1 red bell pepper, diced
  • 1/2 cup primal kitchen no soy teriyaki sauce (found mine at sprouts)
  • 4 tbsp coconut aminos
  • 2 garlic cloves, minced
  • 1 cup white rice
  • bib lettuce
  • rice vinegar (optional)
  • sesame seeds, for garnish

Instructions

  1. in a large plastic bag or large bowl, combine the chicken, garlic, teriyaki, and coconut aminos. set aside and marinate for at least 30 minutes.
  2. prepare the rice according to package
  3. in a large pan or wok over medium-high heat, pour the chicken and marinade and bell pepper into the pan, cook for 8-10 minutes or until cooked through. the chicken should have an internal temp of 165 degrees.
  4. serve over bibb lettuce and drizzle rice vinegar on top (optional) add the rice and chicken bell pepper mixture. top with sesame seeds and enjoy!
