Creamy Dill Salmon

Ingredients

  • 4 salmon filets
  • rolfe rub seasoning
  • 3 garlic cloves
  • 1 lemon
  • 1 cup nutpods original oat creamer
  • 1 cup spinach
  • 2 tsp dijon mustard
  • 1/3 cup chicken broth
  • 1 tbsp olive oil
  • 1 tbsp ghee or butter
  • 2 tbs fresh dill, chopped fine
  • salt, to taste
  • pepper, to taste

Instructions

  1. prepare the salmon. drizzle a little olive oil over the fish (a little goes a long way). season the fish rolfe rub and set aside.
  2. in a hot skillet, sear the salmon for 2 minutes on each side and set aside. it will not be cooked all the way through.
  3. turn the heat to low and let the skillet cool down for a minute or two.
  4. add olive oil, ghee, garlic, salt, and pepper. saute for about a minute.
  5. add the chicken broth, juice of 1/2 lemon, dijon mustard, and slowly pour in the nut pods. stir constantly.
  6. bring to a simmer and add the fresh dill. stir to combine.
  7. add the salmon back to the skillet and cook for another 5-6 minutes or until your salmon is cooked.
  8. last add the spinach and stir it into the mixture until wilted. serve immediately. I served mine with baked baby potatoes.
