Creamy Dill Salmon

Ingredients
- 4 salmon filets
- rolfe rub seasoning
- 3 garlic cloves
- 1 lemon
- 1 cup nutpods original oat creamer
- 1 cup spinach
- 2 tsp dijon mustard
- 1/3 cup chicken broth
- 1 tbsp olive oil
- 1 tbsp ghee or butter
- 2 tbs fresh dill, chopped fine
- salt, to taste
- pepper, to taste
Instructions
- prepare the salmon. drizzle a little olive oil over the fish (a little goes a long way). season the fish rolfe rub and set aside.
- in a hot skillet, sear the salmon for 2 minutes on each side and set aside. it will not be cooked all the way through.
- turn the heat to low and let the skillet cool down for a minute or two.
- add olive oil, ghee, garlic, salt, and pepper. saute for about a minute.
- add the chicken broth, juice of 1/2 lemon, dijon mustard, and slowly pour in the nut pods. stir constantly.
- bring to a simmer and add the fresh dill. stir to combine.
- add the salmon back to the skillet and cook for another 5-6 minutes or until your salmon is cooked.
- last add the spinach and stir it into the mixture until wilted. serve immediately. I served mine with baked baby potatoes.
