Crockpot Fajita Tacos

Ingredients
- 5 lb boneless skinless chicken breast
- 12 oz jar of salsa (I used Trader Joe's authentica)
- 1/2 cup chicken broth
- 1 pack of siete taco seasoning
- 1 red onion, thinly sliced
- 1 yellow bell pepper
- 1 red bell pepper
- Siete tortillas (I used the cassava flour)
- red pepper flakes, to taste (optional for spice)
- cilantro
- lime
- jalapeño (optional)
- sour cream (optional)
- avocado (optional)
Instructions
- place chicken inside the crockpot, season chicken with the taco packet and pour the salsa over the top. add the chicken broth. turn crock pot to low for 2 hours.
- after 2 hours, add in the chopped onion and bell pepper. if it looks dry add another 1/2 cup of chicken broth. cook on low for an additional 2 hours.
- after the total 4 hours is up, shred your chicken and stir everything together in the crockpot.
- serve on Siete tortillas with cilantro, lime, sour cream, avocado, and jalapenos. if you want hot sauce I recommend Cholula!
Notes:
if you like your bell peppers and onion on the softer side you can add them in at the very beginning and cook everything on low for 4 hours.
