Crockpot Fajita Tacos

Ingredients

  • 5 lb boneless skinless chicken breast
  • 12 oz jar of salsa (I used Trader Joe's authentica)
  • 1/2 cup chicken broth
  • 1 pack of siete taco seasoning
  • 1 red onion, thinly sliced
  • 1 yellow bell pepper
  • 1 red bell pepper
  • Siete tortillas (I used the cassava flour)
  • red pepper flakes, to taste (optional for spice)
  • cilantro
  • lime
  • jalapeño (optional)
  • sour cream (optional)
  • avocado (optional)

Instructions

  1. place chicken inside the crockpot, season chicken with the taco packet and pour the salsa over the top. add the chicken broth. turn crock pot to low for 2 hours.
  2. after 2 hours, add in the chopped onion and bell pepper. if it looks dry add another 1/2 cup of chicken broth. cook on low for an additional 2 hours.
  3. after the total 4 hours is up, shred your chicken and stir everything together in the crockpot.
  4. serve on Siete tortillas with cilantro, lime, sour cream, avocado, and jalapenos. if you want hot sauce I recommend Cholula!

Notes:

if you like your bell peppers and onion on the softer side you can add them in at the very beginning and cook everything on low for 4 hours.
