Spicy Veggie Fried Rice

Ingredients

  • 1 cups white rice
  • 2 eggs
  • 1 carrot, diced
  • 1/2 bell pepper, diced
  • 1/2 white onion, diced
  • 1/4 cup coconut aminos
  • 3 tbsp sesame oil
  • 1 tsp harissa paste or sambal oelek
  • salt, to taste
  • pepper, to taste
  • red pepper flakes
  • baby bella mushrooms, diced
  • 3 garlic cloves, minced
  • green onion

Instructions

  1. in a large skillet over medium-high heat, pour one tablespoon of sesame oil and add the carrots and bell peppers. saute for 3-4 minutes.
  2. add in the onion, garlic, salt, and pepper. saute for 2-3 minutes.
  3. add the cooked white rice. stir to combine and then add the harissa, coconut aminos, another tablespoon of sesame oil, and red pepper flakes. stir to combine.
  4. make an "o" shape with the rice and pour a little sesame oil in the center. add the two eggs and whisk them in the center until scrambled. stir to combine.
  5. add the mushrooms and green onion. mix well and serve immediately!
