Spicy Veggie Fried Rice

Ingredients
- 1 cups white rice
- 2 eggs
- 1 carrot, diced
- 1/2 bell pepper, diced
- 1/2 white onion, diced
- 1/4 cup coconut aminos
- 3 tbsp sesame oil
- 1 tsp harissa paste or sambal oelek
- salt, to taste
- pepper, to taste
- red pepper flakes
- baby bella mushrooms, diced
- 3 garlic cloves, minced
- green onion
Instructions
- in a large skillet over medium-high heat, pour one tablespoon of sesame oil and add the carrots and bell peppers. saute for 3-4 minutes.
- add in the onion, garlic, salt, and pepper. saute for 2-3 minutes.
- add the cooked white rice. stir to combine and then add the harissa, coconut aminos, another tablespoon of sesame oil, and red pepper flakes. stir to combine.
- make an "o" shape with the rice and pour a little sesame oil in the center. add the two eggs and whisk them in the center until scrambled. stir to combine.
- add the mushrooms and green onion. mix well and serve immediately!
