Spicy Ranch Street Tacos

Ingredients

  • 1 lb boneless skinless chicken tenders
  • Siete tortillas
  • bibb lettuce
  • frozen or fresh corn (I used Trader Joe's frozen roasted corn)
  • avocado
  • 1/2 white onion
  • cilantro
  • 5 oz can green chilies
  • 2 tbsp olive oil
  • 3 tbsp taco seasoning
  • 1/4 cup Tessemae's avocado ranch
  • 1 tsp garlic powder
  • 1/2 tbsp Cholula hot sauce
  • 1/2 tsp cayenne pepper

Instructions

  1. place the chicken on a large cutting board and cut into very small bite size pieces. place the chicken in a bowl or zip-lock bag with olive oil, taco seasoning, and green chilies. set aside and marinate for at least 30 minutes. while it marinates, chop the toppings.
  2. cook the frozen corn according to the package or cook the fresh corn on a skillet with olive oil, salt, and pepper, saute for 5-6 minutes on medium-high heat.
  3. make the spicy ranch. in a small bowl, combine tessemae ranch, cholula hot sauce, cayenne pepper, and garlic powder.
  4. cook the chicken in a skillet over medium-high heat. cook until brown, charred, and no longer pink.
  5. assemble your taco! I topped mine with corn, avocado, spicy ranch, cilantro and white onion.
