Spicy Ranch Street Tacos

Ingredients
- 1 lb boneless skinless chicken tenders
- Siete tortillas
- bibb lettuce
- frozen or fresh corn (I used Trader Joe's frozen roasted corn)
- avocado
- 1/2 white onion
- cilantro
- 5 oz can green chilies
- 2 tbsp olive oil
- 3 tbsp taco seasoning
- 1/4 cup Tessemae's avocado ranch
- 1 tsp garlic powder
- 1/2 tbsp Cholula hot sauce
- 1/2 tsp cayenne pepper
Instructions
- place the chicken on a large cutting board and cut into very small bite size pieces. place the chicken in a bowl or zip-lock bag with olive oil, taco seasoning, and green chilies. set aside and marinate for at least 30 minutes. while it marinates, chop the toppings.
- cook the frozen corn according to the package or cook the fresh corn on a skillet with olive oil, salt, and pepper, saute for 5-6 minutes on medium-high heat.
- make the spicy ranch. in a small bowl, combine tessemae ranch, cholula hot sauce, cayenne pepper, and garlic powder.
- cook the chicken in a skillet over medium-high heat. cook until brown, charred, and no longer pink.
- assemble your taco! I topped mine with corn, avocado, spicy ranch, cilantro and white onion.
