Flank Steak Tacos & Sweet Potato Hash

Ingredients
- 1 red onion
- 1 sweet potato
- 1 red bell pepper
- 1 jalapeno
- 1 lime
- cilantro
- siete tortillas
- olive oil
- siete taco seasoning
Marinade
- 1 lb flank steak
- 1 lime
- 1 tsp lime zest
- 1 garlic clove minced
- 2 tbs olive oil
- 1 tbs orange juice
- 1 jalapeno, diced
- 1 tsp cumin
Instructions
- marinate the flank steak with everything listed under "steak marinade" for at least 1 hour. the longer the better!
- make the sweet potato hash! in a hot skillet, pour about 2 tbs of olive oil and the diced sweet potatoes. saute for about 5 minutes. add more oil as needed
- after 5 minutes, add the 1 bell pepper and 1 jalapeno to the skillet. saute for about 1 minute
- add about 1/3 of siete taco seasoning and a dash of water to the sweet potato hash. cook down for 2-3 minutes
- garnish with fresh lime juice and set aside
- while I prepared the sweet potato hash, in another skillet, I caramelized my onions. all you need is olive oil and very thin onions. cook on medium-low, stirring occasionally until very soft and brown.
- cook the flank steak on high heat. depending on the size of the steak, cook on each side 4-6 minutes or until internal temp is 130 degrees.
- once meat is cooked. slice the meat in thin strips and then cut it in small cube like bites.
- assemble your taco with steak, caramelized onions, fresh jalapeno, cilantro, and lime!
