Lemon Chicken Pasta

Ingredients
- 1.5 lb boneless skinless chicken thighs
- 1 box of banza angel hair pasta
- 3 lemons
- 2 eggs
- 3/4 cup almond flour
- 1/2 cup tapioca starch (or cornstarch)
- 2 tsp garlic powder
- 2 tsp salt, or to taste
- 1 tsp pepper
- 1 tsp oregano
- 2 tbs chicken broth
- 1/4 cup nut pods
- 1/4 cup olive oil
- 4 garlic cloves, minced
- fresh shaved parmesan
- fresh parsley, to garnish
Instructions
- pre-heat oven to 375
- in a small bowl, crack the two eggs and whisk until frothy.
- in another bowl, combine almond flour, tapioca starch, garlic powder, salt, pepper, and oregano.
- lay a piece of parchment paper down and place the chicken on top. next place another piece of parchment paper over the chicken and take a meat mallet and beat the chicken until thin and flat.
- after the chicken is prepped, take piece by piece and dip in the egg and then place in the almond flour mixture. do this for each piece and set aside.
- in a large dutch oven or pot on medium heat, drizzle olive oil covering the bottom of the pot.
- place chicken at the bottom of the dutch oven and cook on each side for about 5 minutes. once cooked place on a cast iron skillet or baking sheet and top with fresh parmesan and a little lemon juice.
- cook in oven for 10-15 minutes or until the internal temperature is 165 degrees.
- while the chicken cooks prep the rest of your meal. In a separate pot, cook the pasta according to the package.
- In the same dutch oven that you made the chicken on medium-low heat, add the 1/4 cup of olive oil, garlic cloves, and half of a lemon cut into thin slices. saute for 4-5 minutes being careful not burn the garlic. (note: crush the lemons a bit to release some of the juice)
- after you saute, add the nut pods and chicken broth. stir to combine. turn heat to low and bring to a simmer.
- add the pasta to the pot and top with lots of parmesan. turn heat off and stir to combine. season with salt and top with juice of a lemon.
- take the chicken out of the oven and assemble your bowl!
- time to dig in!
