Lemon Chicken Pasta

Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 1 box of banza angel hair pasta
  • 3 lemons
  • 2 eggs
  • 3/4 cup almond flour
  • 1/2 cup tapioca starch (or cornstarch)
  • 2 tsp garlic powder
  • 2 tsp salt, or to taste
  • 1 tsp pepper
  • 1 tsp oregano
  • 2 tbs chicken broth
  • 1/4 cup nut pods
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • fresh shaved parmesan
  • fresh parsley, to garnish

Instructions

  1. pre-heat oven to 375
  2. in a small bowl, crack the two eggs and whisk until frothy.
  3. in another bowl, combine almond flour, tapioca starch, garlic powder, salt, pepper, and oregano.
  4. lay a piece of parchment paper down and place the chicken on top. next place another piece of parchment paper over the chicken and take a meat mallet and beat the chicken until thin and flat.
  5. after the chicken is prepped, take piece by piece and dip in the egg and then place in the almond flour mixture. do this for each piece and set aside.
  6. in a large dutch oven or pot on medium heat, drizzle olive oil covering the bottom of the pot.
  7. place chicken at the bottom of the dutch oven and cook on each side for about 5 minutes. once cooked place on a cast iron skillet or baking sheet and top with fresh parmesan and a little lemon juice.
  8. cook in oven for 10-15 minutes or until the internal temperature is 165 degrees.
  9. while the chicken cooks prep the rest of your meal. In a separate pot, cook the pasta according to the package.
  10. In the same dutch oven that you made the chicken on medium-low heat, add the 1/4 cup of olive oil, garlic cloves, and half of a lemon cut into thin slices. saute for 4-5 minutes being careful not burn the garlic. (note: crush the lemons a bit to release some of the juice)
  11. after you saute, add the nut pods and chicken broth. stir to combine. turn heat to low and bring to a simmer.
  12. add the pasta to the pot and top with lots of parmesan. turn heat off and stir to combine. season with salt and top with juice of a lemon.
  13. take the chicken out of the oven and assemble your bowl!
  14. time to dig in!
