- marinate the chicken with 3 tbsp dijon mustard, 1 tbsp olive oil, 1 tsp dried oregano, 1 tsp garlic powder, salt and pepper to taste. set aside to marinate for at least 15 minutes.
- while the chicken marinates, prepare the topping/garnish. dice cucumber, tomato, and shallot. add 1/2-1 tbsp olive oil, a dash of balsamic vinegar, salt, feta cheese, and 1 tsp chopped fresh dill. mix to combine and set aside.
- prepare the chicken. heat a cast-iron skillet over medium-high heat. add a dash of olive oil or avocado oil to the skillet and sear the chicken. cook on each side for 3-4 minutes or until the internal temperature is 165 degrees.
- serve the chicken with the cucumber garnish and enjoy!
