Ingredients
Tomato & Goat Cheese Chicken Meatballs
- 1 lb. ground chicken
- 1 egg
- 1/2 lemon, juiced
- 3 tbsp goat cheese
- 1/4 cup cauli crunch or panko bread crumbs
- 1/4 cup nut pods
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1-2 tsp salt
- 4 green onion, diced
- 1 tbsp fresh parsley, minced
- 2 tbsp tomato paste
- 1 tsp red pepper flakes (optional)

- 7 oz. banza rice
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 cup chopped spinach
- 1 tbsp fresh mint, minced
- 2 green onions, diced
- salt, to taste
- greek dressing:
- 3/4 cup olive oil
- 1/3 cup red wine vinegar
- 1 tsp salt
- 2 garlic cloves, minced
- 1 tsp oregano
Instructions
Tomato & Goat Cheese Chicken Meatballs
- in a large ziplock bag, add ground chicken, 1 egg, juice from 1/2 lemon, 3 tbsp goat cheese, 1/4 cup cauli crunch, 1/4 cup nut pods, 3 minced garlic cloves, 1 tsp dried oregano, 1-2 tsp salt, 1 tbsp fresh chopped parsley, 2 tbsp tomato paste, and 1 tsp red pepper flakes. close the bag and massage the ingredients together. place in the refrigerator to marinate for at least 30 minutes. TIP: the longer you wait the better the flavor will be!
- when you are ready to cook the meatballs roll them into golfball sized balls and set aside.
- AIR FRYER METHOD: cook for 15-20 minutes on 400 degrees.
- OVEN METHOD: cook for 20-24 minutes on 400 degrees.
Greek Orzo Salad
- prepare the banza rice according to the package. TIP: cook it about 1 minute shorter than the package recommends. drain immediately and rinse with cold water to avoid getting too soft and mushy.
- make the greek dressing. in a jar or bowl, combine 3/4 cup olive oil, 1/3 cup red wine vinegar, 1 tsp salt, 2 minced garlic cloves, and 1 tsp oregano. stir or shake to combine. NOTE: store the leftover dressing at room temperature and shake or stir before every use.
- once the rice is finished cooking, add the diced bell pepper, cucumber, spinach, mint, diced green onion, and salt. toss to combine.
- add as much dressing as you like and toss to combine.
- serve warm or cold!
