Hot Honey Chicken Dinner

Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 2 cups baby potatoes
  • 2 cups brussels sprouts, halved
  • Mike's hot honey, for drizzling
  • 4 tbsp olive oil
  • 4 tsp rolfe rub
  • salt, to taste
  • pepper, to taste
  • red pepper flakes, for spice

Instructions

  1. fill a large pot with water and bring to a boil. once boiling, add the potatoes and cook for 10 minutes.
  2. while the potatoes cook, prepare your other ingredients. 
  3. season the chicken by drizzling olive oil over top and bottom and seasoning with rolfe rub. 
  4. drain the potatoes and place in a large bowl with the brussels sprouts. 
  5. drizzle with olive oil and season with salt and pepper. toss to combine and then spread out on a baking sheet.
  6. place the chicken on the baking sheet and drizzle everything with honey and season with red pepper flakes.
  7. cook in the oven for 25 minutes at 425 degrees. internal temperature should be 165.
  8. enjoy this super simple dinner!

Notes:

If you don't have rolfe rub, I would do salt, pepper, and garlic powder.
