Hot Honey Chicken Dinner

Ingredients
- 2 lbs boneless skinless chicken thighs
- 2 cups baby potatoes
- 2 cups brussels sprouts, halved
- Mike's hot honey, for drizzling
- 4 tbsp olive oil
- 4 tsp rolfe rub
- salt, to taste
- pepper, to taste
- red pepper flakes, for spice
Instructions
- fill a large pot with water and bring to a boil. once boiling, add the potatoes and cook for 10 minutes.
- while the potatoes cook, prepare your other ingredients.
- season the chicken by drizzling olive oil over top and bottom and seasoning with rolfe rub.
- drain the potatoes and place in a large bowl with the brussels sprouts.
- drizzle with olive oil and season with salt and pepper. toss to combine and then spread out on a baking sheet.
- place the chicken on the baking sheet and drizzle everything with honey and season with red pepper flakes.
- cook in the oven for 25 minutes at 425 degrees. internal temperature should be 165.
- enjoy this super simple dinner!
Notes:
If you don't have rolfe rub, I would do salt, pepper, and garlic powder.
