Orange Peel Chicken

Ingredients
- 5-2 lbs boneless skinless chicken breast tenders
- 1/3 cup coconut aminos
- 3 tbsp rice vinegar
- 2 garlic cloves, minced
- 1 tsp ginger
- 1 tbsp honey (I used mike's hot honey)
- 1 tbsp orange zest
- red pepper flakes, to taste
- 5 tbsp tapioca starch (or corn starch)
- 1 cup white rice
- 1 egg, whisked
Instructions
- cut the chicken tenders into small bite-sized pieces. place in a bowl and cover with egg. add 1 tbsp of tapioca starch and stir to combine.
- place in the air fryer and cook at 400 degrees for 20 minutes. be sure to periodically check on the chicken and flip as they cook. I flipped mine 3-4 times.
- while the chicken cooks, prepare the sauce.
- once the chicken is cooked set aside while you heat the sauce.
- pour the sauce over the chicken and toss to combine.
- serve over rice and enjoy!
Sauce
- combine coconut aminos, ginger, garlic, rice vinegar, red pepper flakes, honey, orange zest, and 1/2 tbsp of tapioca starch.
- in a small saucepan bring the sauce to a simmer and stir until it thickens.
