Orange Peel Chicken

Ingredients

  • 5-2 lbs boneless skinless chicken breast tenders
  • 1/3 cup coconut aminos
  • 3 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1 tsp ginger
  • 1 tbsp honey (I used mike's hot honey)
  • 1 tbsp orange zest
  • red pepper flakes, to taste
  • 5 tbsp tapioca starch (or corn starch)
  • 1 cup white rice
  • 1 egg, whisked

Instructions

  1. cut the chicken tenders into small bite-sized pieces. place in a bowl and cover with egg. add 1 tbsp of tapioca starch and stir to combine.
  2. place in the air fryer and cook at 400 degrees for 20 minutes. be sure to periodically check on the chicken and flip as they cook. I flipped mine 3-4 times.
  3. while the chicken cooks, prepare the sauce. 
  4. once the chicken is cooked set aside while you heat the sauce.
  5. pour the sauce over the chicken and toss to combine.
  6. serve over rice and enjoy!
Sauce
  1. combine coconut aminos, ginger, garlic, rice vinegar, red pepper flakes, honey, orange zest, and 1/2 tbsp of tapioca starch.
  2. in a small saucepan bring the sauce to a simmer and stir until it thickens.
