Lemon Butter Salmon Sheet Pan Dinner

Ingredients
- 2 salmon filets
- 3 tbsp olive oil
- 2 tsp rolfe rub
- 2 cups broccoli
- 1/2 lemon
- 1/2 tbsp dijon mustard
- 2 tbsp softened butter
- 1/2 tbsp parsley
- 1 tsp garlic powder
- 2 cups baby potatoes
Instructions
- preheat the oven to 375 degrees
- in a large pot over high heat, add 3-4 cups of salted water and boil the potatoes for 15 minutes. once they are finished boiling, drain and set them aside.
- prepare the salmon. drizzle 1-2 tsp olive oil on the salmon filets and season with rolfe rub.
- lay parchment paper on a sheet pan and place the broccoli, potatoes, and salmon on the pan. drizzle 2-3 tbsp olive oil on the broccoli and potatoes. season with salt and pepper.
- place the sheet pan in the oven and bake for 12-13 minutes.
- prepare the lemon butter sauce. combine 1/2 tbsp dijon mustard, 2 tbsp softened butter, 1/2 tbsp fresh parsley, 1 tsp garlic powder, and juice from 1/2 lemon. stir to combine.
- once everything is finished cooking, spread the lemon butter sauce on the hot salmon and pour any excess sauce onto the broccoli and potatoes.
- top everything with fresh parsley and enjoy!
