Feta & Quinoa White Fish Dinner

Ingredients
- 2 white fish filets, I used cod
- 3 tsp rolfe rub (purchase on www.rolferub.com)
- 2 cup cherry tomatoes
- 1 tbsp fresh chopped parsley
- 2 tbsp olive oil
- 1 lemon, juiced
- 2 green onion, chopped
- 4
- garlic cloves, minced
- 1/4 cup feta cheese
- 1 cup chopped spinach
- broccolini
- 1 tsp onion powder
- 1 tsp garlic powder
- red pepper flakes, to taste
- 1/2 white onion
- 1 cup quinoa
- 2 cups chicken broth
- salt, to taste
Instructions
- preheat the oven to 375 degrees.
- prepare the marinated tomatoes. cut the cherry tomatoes in half and add 1 tbsp fresh chopped parsley, 2 tbsp olive oil, 3 tbsp fresh lemon juice, 2 chopped green onions, 2 minced garlic cloves, and salt to taste. set aside to marinate while you prepare the other ingredients.
- prepare the quinoa. in a pot over high heat, add 1 cup of uncooked quinoa with 1 tbsp olive oil and 1/2 chopped white onion. saute for 1-2 minutes and add 2 cups of chicken broth and 2 minced garlic cloves. once boiling, turn the heat to low and cover with a lid. cook for 10-12 minutes or until the quinoa is soft and fluffy.
- once the quinoa is cooked, turn the heat off and add 1 cup of chopped spinach and 1/4 cup of feta cheese. stir to combine and set aside.
- prepare the broccolini. lay the broccolini on a baking sheet and drizzle 1-2 tbsp olive oil and season with salt, 1 tsp garlic powder, 1 tsp onion powder, red pepper flakes, and 1-2 tbsp fresh lemon juice. toss to combine and place in the oven to bake for 10-12 minutes.
- prepare the fish. drizzle a little olive oil on both of the fish filets and season with rolfe rub. cook on a cast-iron skillet over medium-high heat. sear on each side for 3-4 minutes.
- serve the fish over the feta quinoa with the roasted broccolini on the side topped with marinated tomatoes.
