Feta & Quinoa White Fish Dinner

Ingredients

  • 2 white fish filets, I used cod
  • 3 tsp rolfe rub (purchase on www.rolferub.com)
  • 2 cup cherry tomatoes
  • 1 tbsp fresh chopped parsley
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 2 green onion, chopped
  • 4
  • garlic cloves, minced
  • 1/4 cup feta cheese
  • 1 cup chopped spinach
  • broccolini
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • red pepper flakes, to taste
  • 1/2 white onion
  • 1 cup quinoa
  • 2 cups chicken broth
  • salt, to taste

Instructions

  1. preheat the oven to 375 degrees.
  2. prepare the marinated tomatoes. cut the cherry tomatoes in half and add 1 tbsp fresh chopped parsley, 2 tbsp olive oil, 3 tbsp fresh lemon juice, 2 chopped green onions, 2 minced garlic cloves, and salt to taste. set aside to marinate while you prepare the other ingredients.
  3. prepare the quinoa. in a pot over high heat, add 1 cup of uncooked quinoa with 1 tbsp olive oil and 1/2 chopped white onion. saute for 1-2 minutes and add 2 cups of chicken broth and 2 minced garlic cloves. once boiling, turn the heat to low and cover with a lid. cook for 10-12 minutes or until the quinoa is soft and fluffy.
  4. once the quinoa is cooked, turn the heat off and add 1 cup of chopped spinach and 1/4 cup of feta cheese. stir to combine and set aside.
  5. prepare the broccolini. lay the broccolini on a baking sheet and drizzle 1-2 tbsp olive oil and season with salt, 1 tsp garlic powder, 1 tsp onion powder, red pepper flakes, and 1-2 tbsp fresh lemon juice. toss to combine and place in the oven to bake for 10-12 minutes.
  6. prepare the fish. drizzle a little olive oil on both of the fish filets and season with rolfe rub. cook on a cast-iron skillet over medium-high heat. sear on each side for 3-4 minutes.
  7. serve the fish over the feta quinoa with the roasted broccolini on the side topped with marinated tomatoes.
