Roasted Tomato Spaghetti

Ingredients

  • 1 lb ground italian sausage
  • 8 oz. banza angel hair pasta
  • 2 cups cherry tomatoes
  • 1 tsp red pepper flakes
  • 1 small shallot, diced
  • 3 garlic cloves, minced
  • 1/4 cup nut pods orignal oat creamer
  • 3 tbsp olive oil
  • 1 tbsp tomato paste
  • fresh parsley, to garnish
  • parmesan cheese, to garnish
  • salt, to taste

Instructions

  1. prepare the pasta in a large pot of salted water. boil the pasta for 3 minutes.
  2. in a large pan over medium-high heat, begin to cook the sausage. break the meat apart into small pieces. cook until brown and no longer pink. once finished cooking, drain and set aside.
  3. in the same pan you prepared the sausage still on low heat, add olive oil, shallot, and garlic. saute for 2-3 minutes.
  4. add 1 tbsp tomato paste, red pepper flakes, and salt. stir to combine
  5. add the cherry tomatoes and saute for 4-5 minutes. crush a few of the tomatoes while you cook them.
  6. add the 1/4 cup of nut pods and bring to a simmer.stir to combine.
  7. add the cooked pasta directly from the pot of water into the tomato mixture. stir to combine and add the cooked sausage.
  8. stir to combine and top with fresh parsley, parmesan cheese, and red pepper flakes
