Roasted Tomato Spaghetti

Ingredients
- 1 lb ground italian sausage
- 8 oz. banza angel hair pasta
- 2 cups cherry tomatoes
- 1 tsp red pepper flakes
- 1 small shallot, diced
- 3 garlic cloves, minced
- 1/4 cup nut pods orignal oat creamer
- 3 tbsp olive oil
- 1 tbsp tomato paste
- fresh parsley, to garnish
- parmesan cheese, to garnish
- salt, to taste
Instructions
- prepare the pasta in a large pot of salted water. boil the pasta for 3 minutes.
- in a large pan over medium-high heat, begin to cook the sausage. break the meat apart into small pieces. cook until brown and no longer pink. once finished cooking, drain and set aside.
- in the same pan you prepared the sausage still on low heat, add olive oil, shallot, and garlic. saute for 2-3 minutes.
- add 1 tbsp tomato paste, red pepper flakes, and salt. stir to combine
- add the cherry tomatoes and saute for 4-5 minutes. crush a few of the tomatoes while you cook them.
- add the 1/4 cup of nut pods and bring to a simmer.stir to combine.
- add the cooked pasta directly from the pot of water into the tomato mixture. stir to combine and add the cooked sausage.
- stir to combine and top with fresh parsley, parmesan cheese, and red pepper flakes
