Creamy Sausage Orecchiette

Ingredients

  • 12 oz. orecchiette pasta
  • 1 cup reserved pasta water
  • 1 lb mild italian ground sausage
  • 1 cup chopped spinach
  • 1/2 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1/2 cup finely grated pecorino romano cheese
  • 2 tsp fresh cracked pepper
  • kosher salt, to taste

Instructions

  1. prepare the pasta. bring a large pot of water to a boil and season with a generous amount of salt. once boiling, add the pasta and cook until it is soft, but still has a chew. about 6-8 minutes.
  2. while the pasta cooks, prepare the sausage. in another pot over medium-high heat, add 1 tbsp olive oil and saute the onion and garlic for 1-2 minutes. add the sausage and begin to break it apart with a spatula into small pieces. cook until browned and no longer pink. if there is a lot of excess grease, drain and set aside.
  3. add the cooked pasta to the pot of sausage and stir to combine. keep the pot on low heat and add the 1/2 cup cheese. stir to combine. season with salt and cracked pepper.
  4. slowly add the reserved pasta water and continue to stir.
  5. turn the heat off and add the chopped spinach. stir to combine.
  6. serve warm with freshly grated cheese on top & enjoy!
