Creamy Sausage Orecchiette

Ingredients
- 12 oz. orecchiette pasta
- 1 cup reserved pasta water
- 1 lb mild italian ground sausage
- 1 cup chopped spinach
- 1/2 yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1/2 cup finely grated pecorino romano cheese
- 2 tsp fresh cracked pepper
- kosher salt, to taste
Instructions
- prepare the pasta. bring a large pot of water to a boil and season with a generous amount of salt. once boiling, add the pasta and cook until it is soft, but still has a chew. about 6-8 minutes.
- while the pasta cooks, prepare the sausage. in another pot over medium-high heat, add 1 tbsp olive oil and saute the onion and garlic for 1-2 minutes. add the sausage and begin to break it apart with a spatula into small pieces. cook until browned and no longer pink. if there is a lot of excess grease, drain and set aside.
- add the cooked pasta to the pot of sausage and stir to combine. keep the pot on low heat and add the 1/2 cup cheese. stir to combine. season with salt and cracked pepper.
- slowly add the reserved pasta water and continue to stir.
- turn the heat off and add the chopped spinach. stir to combine.
- serve warm with freshly grated cheese on top & enjoy!
